Shire Council Confirm The Next Step Is Underway For Whiskey Distillery

The Colac Otway Shire Council will seek Ministerial authorisation to gain approval for the establishment of a whiskey distillery, restaurant and function centre on the former Mitre 10 site in Colac.

Colac Otway Shire Mayor Jason Schram said Council was pleased to support the exhibition of the new industry and business proposal, which had the potential to provide great economic benefits to the Colac community.

“The Whipper Snapper application demonstrates the level of interest in Colac and should provide other businesses and investors with confidence in our shire. There has been a real economic turnaround in Colac; the highway duplication is almost complete, we are seeing new businesses open and existing businesses looking to expand.

“The Whipper Snapper application is the type of proposal that, if approved, could boost local employment and tourism. Council is looking forward to continuing to assist as they go through the necessary planning process.”

The Whipper Snapper proposal includes turning the unoccupied 6584-square-metre site in Murray Street into a distillery, restaurant, art-craft centre, function centre, bar and carpark.

The distillery plans to brew an estimated 77,000 litres of whiskey a year which would be sold locally and supplied to a larger retailer, and the application proposes up to 32 staff will be employed on site during busy times.

Council aims to gain authorisation to exhibit the amendment in December.
